Canonical name of an LLVM global identifier, without the IR-only @ sigil or optional quoting.

Evidence producers may retain LLVM syntax such as @_Z3foov or @"symbol with spaces", while symbol inventories store _Z3foov or symbol with spaces. Cross-stage comparisons and fingerprints must use this canonical form rather than treating those spellings as different symbols.
